Every batch follows the same route from field to bottle — timed by taste, not by the clock.

  1. Malt the barley

    Two-row Saale barley, steeped and turned by hand on the malting floor for 6 days until it just starts to sprout.

  2. Brew & ferment

    Copper kettle, whole-cone Halland hops, then 18 days cold-fermenting with the same house yeast we’ve run since 1911. This is where the batch is won or lost.

  3. Condition & bottle

    Seventeen days conditioning, then bottled cold within four hours of leaving the tank so the carbonation never gets a chance to settle wrong.
